Yogurt and Berry Cups

 

Ingredients:
1.5 cup oats (regular or gluten free)
1/2 cup smooth peanut butter 
3 tbsp maple syrup
6 tablespoons of yogurt
6 strawberries, diced (or the berries of your choice)

Instructions:
1. Preheat the oven to 375F. Place 6 silicone baking cups in a muffin tray.
2. In a medium bowl, mix together the peanut butter and maple syrup. Then add the rolled oats and stir well to combine.
3. Divide the mixture evenly between the silicone baking cups. Using the end of a rolling pin, press down in the middle to make the cup shape.
4. Bake for 12 minutes, or until light brown and crispy. Leave in tray to cool.
5. When ready to serve, fill each cup with yogurt and berries.
