Pumpkin Spice Baked Oatmeal

This delicious breakfast comes together in one bowl and can be baked ahead. Add a little pumpkin spice to your morning ritual, and get the family out the door with a hardy breakfast. 
 
Ingredients:
2 cups rolled oats (we also have gluten-free available)
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon baking powder
1/4 teaspoon salt
1 cup pumpkin puree
1 1/4 cups milk of choice (use dairy or dairy-free options)
2 large eggs (you can use flax eggs to make this vegan)
2 teaspoons vanilla
1/3 cup maple syrup or honey
Instructions:
1. Preheat the oven to 375℉ degrees. Grease an 8×8 baking dish.
2. In a medium bowl, combine oats, spices, baking powder, and salt. Mix to combine.
3. Add pumpkin puree, milk, eggs, vanilla, and maple syrup/honey to the bowl. Stir to combine. This is the time when you can add in fun mix-ins like nuts, chocolate chips, or dried cranberries! 
4. Spread into the prepared baking dish. Bake for 30-35 minutes. Your oatmeal is done when it is puffed up on the edges, set in the middle and the top is golden.
5. Cool for 5 minutes before slicing. Let cool completely and store in the fridge for up to 4 days.
