Olive and Feta Cheese Pasta
I was looking for a recipe to use up some kalamata olives that I've had in my fridge for a while and I came across this one. It is so easy and yet so tasty.
Ingredients:
1 clove garlic
1/2 cup kalamata olives
2 tbsp olive oil
Salt
Freshly ground pepper to taste
1 tbsp butter
4 cups cooked pasta of your choice (I used spaghetti this time)
1/2 cup sun-dried tomato halves, cut into strips
1 tbsp fresh basil, chopped
1 1/3 cups feta cheese, diced
Instructions:
1. In a food processor, chop the garlic and olives. Add the oil gradually until mixture is creamy. Season to taste.
2. In a frying pan, melt the butter and add the cooked pasta. Add the olive mixture and stir to coat well. Mix in the sun-dried tomatoes and basil. Cook for 1-2 minutes.
3. Turn of the heat and add the feta. Let sit, covered, for 2 minutes to warm through.
