Ice Cream Sundae Popcorn

In honour of National Popcorn Day on January 19, I am sharing this recipe for Ice Cream Sundae Popcorn.

If you don't love dried bananas, feel free to omit them or substitute them with dried strawberries. Similarly, the peanuts can be substituted for almond butter and sliced almonds and the chocolate chips can be replaced with Skor bits. The possibilities are endless.

Ingredients:

1/2 cup of popcorn (approximately 8 cups when popped)
1/2 cup honey
1/4 cup sugar
1/2 tsp vanilla extract
1/2 tsp salt
1 cup peanuts
1/2 cup dried bananas (break the larger pieces in half)
1/4 cup chocolate chips

Instructions:

1. Pop the popcorn using an air popper.

2. Heat the honey and sugar in a pot over medium heat, stirring, until the sugar dissolves, about 5 minutes.

3. Stir in peanut butter, vanilla extract and salt until smooth.

4. Spread popped popcorn out on two baking sheets. Evenly distribute peanuts and chocolate chips.

5.Pour sauce evenly over top of everything and let cool.
