Honey Cake
As I gathered with my family over the holidays, I spent some time thinking about all of the people who weren't there to celebrate with us, as I sometimes do. In particular, I was thinking about my maternal grandmother. She loved to cook and to bake. She left me a wonderful cookbook that I occasionally pull out. I have to be very careful with it as the pages are all falling out. I have plans to digitize it at some point, but I haven't gotten there yet.
When I went to grab this old recipe book off of my bookshelf, it opened to the page for her Honey Cake recipe. I just had to make it. I know that my cousin has made it several times. For reasons unknown, I had never made it myself until now.
Ingredients:
2 1/2 cups flour (I used our gluten free blend)
1 tsp baking soda
2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp all spice
3 eggs
1/4 cup canola oil
1 cup sugar
1 cup honey
1 cup strong brewed tea, cold (I used organic black this time)
1/3 cup sliced almonds
Instructions:
1. Preheat oven to 325F and grease two loaf pans. Roast the sliced almonds on a baking sheet until slightly brown, approximately 5 minutes.
2. In a large bowl, mix all dry ingredients, except the almonds.
3. In a second bowl, mix all wet ingredients.
4. Pour wet ingredients into dry and stir to combine. Then pour mixed ingredients into greased pans. Top with roasted almonds.
5. Bake in the oven for 50 minutes.
