Black Bean Brownies

 

Ingredients:
1 can of black beans, drained and rinsed well
2 Tbsp cocoa powder
1/2 cup quick oats
1/4 Tsp salt
1/2 Tsp Baking Powder
1/4 cup Olive Oil
1/2 Cup Maple Syrup
1/2 cup Chocolate Chips

Instructions:
1. Preheat oven to 350 degrees
2. Place black beans into the bottom of a food processor, followed by all other ingredients except for chocolate chips. Blend until smooth, approximately 5 minutes.
3. Stir chocolate chips into blended batter. 
4. Pour batter into greased 8x8 pan.
5. Bake for 15-18 minutes, until set.
6. Place on rack to cool. Once cool, place in the refrigerator for half an hour to let chocolate chips harden, then cut into squares.
